Cover the dough with plastic wrap or a cloth and let it rest for 45 minutes to 1 hour.

After resting, take the dough and roll it out to a thickness of 1 cm.

Cut the rolled dough into strips to form the pici.

Shape the strips into rustic, thick spaghetti-like strands.

If the strands are too long, cut them to a manageable size.

Dust the pici with flour to prevent sticking.
