Clean the pork trotters thoroughly and cut them into smaller pieces, exactly in half.

In a 10-liter pot, add the pork trotters and fill with cold water.

Add 1 tablespoon of coarse salt and bring to a boil.

Once boiling, remove the lid and skim off the foam for about 30 minutes.

After 30 minutes, add 1 head of garlic, 1 tablespoon of black peppercorns, 70 ml of white wine vinegar, and 4 bay leaves.

Cover the pot partially and simmer for 3 to 4 hours until the meat falls off the bones.

Remove the trotters from the pot and reserve the cooking liquid.

In a separate pot over medium-low heat, add 100 ml of sunflower oil and 1 tablespoon of brown sugar, allowing the sugar to melt.

Once melted, add the trotters and 100 ml of soy sauce, along with 1 head of minced garlic, 2 chopped hot peppers, 5 chopped cherry tomatoes, and 150 g of sweet chili sauce.

Add 300 ml of the reserved cooking liquid and stir.

Cover the pot and simmer for 1 hour, removing the lid after 15 minutes to allow the sauce to reduce.

Once cooked, garnish with parsley and serve.
