Peel and cut sweet potatoes into thick slices or wedges.
Boil sweet potatoes in water until fork-tender, about 10-15 minutes.

In a pan, combine brown sugar and a little water over medium heat until dissolved.
Add the sweet potatoes to the sugar mixture and cook until caramelized, about 5-7 minutes.
Remove sweet potatoes from the pan and let them cool.
Heat cooking oil in a deep fryer or large pot until hot.
Skewer the caramelized sweet potatoes on bamboo skewers.
Deep-fry the skewered sweet potatoes until golden brown, about 3-4 minutes.
Remove from oil and drain on paper towels.
Sprinkle with sesame seeds while still warm.
