Egg whites are lower in calories and cholesterol.

1

Cut the 8 links of Farmer John pork sausage into bite-sized pieces.

2

Add the sausage pieces to a large skillet over medium-high heat and spread them out into an even layer.

3

Let the sausage cook for a few minutes until it starts to brown, about 5 minutes.

4

Remove the sausage from the skillet but save the sausage grease.

5

Add the cut-up hash brown patties to the sausage grease in the skillet, spreading them out into an even layer.

6

Let the hash browns sit for about 3 to 4 minutes, then flip them and season with salt, pepper, garlic powder, and chopped onions.

7

Continue flipping the potatoes every few minutes until they are nice and crispy and golden brown.

8

Taste the hash browns and adjust seasoning if necessary.

9

Once the potatoes are seasoned and golden brown, add the cooked sausage back into the skillet and mix well.

10

Add half of the well-drained can of Rotel, mix, then add the rest of the can and mix until everything is well incorporated.

11

Turn off the heat and add 12 well-beaten eggs and a handful of the Mexican blend shreds, mixing well.

12

Smooth everything out into an even layer in the skillet and add another handful of the Mexican blend shreds on top.

13

Place the skillet into a preheated 350°F oven for 10 to 15 minutes or until the eggs are set and the cheese is melted.

14

After 12 minutes, check that the eggs are set and the cheese has melted (not all of it may melt).

15

Cut the frittata into pieces, either 4 for big eaters or 8 for normal portions.
