South African Beef Stew

Basil and oregano can mimic herbal flavors.
Coat beef with flour, salt, and black pepper, mixing with a wooden spoon and hands.
Brown the beef in hot oil for about 2 minutes on each side, then transfer to another dish.
In the same pot, add chopped carrots and onions, frying until soft.
Add crushed garlic and thyme, mixing well.
Stir in curry powder (1-2 tablespoons) and bay leaves.
Add tomato paste (50 grams) and mix everything together.
Pour in 1 cup of chicken stock (dissolved in hot water) and cook until the sauce thickens.
Return the browned beef to the pot and mix well.
Dissolve 2 cubes of beef stock in 500 ml of water and add to the pot, mixing everything together.
Cook on low heat for about 2 hours, stirring occasionally.
Season with salt and pepper before serving.
