1

Peel and cut golden potatoes into cubes.

2

Transfer potatoes into a pan, cover, and cook until al dente.

3

Drain the water and allow the potatoes to cool.

4

In a separate pan, add corned beef and chopped onions, stir, and cook to reduce oil.

5

Add water to the corned beef mixture to prevent it from drying out, then bring to a boil and cover.

6

In a bowl, mix flour, salt, and baking powder until well combined.

7

Add 1 cup of cook brand margarine to the flour mixture and mix.

8

Pour in evaporated milk and mix, then add water to form a soft dough without kneading too much.

9

Divide the dough in half, wrap in plastic wrap, and let it rest for 15 minutes.

10

Dust the work surface and divide the dough into four equal parts.

11

Add cooled potatoes, chopped onions, and scallions to the corned beef filling and stir together.

12

Prepare egg wash using egg whites and evaporated milk.

13

Place about a tablespoon of filling in the middle of the dough crust, brush edges with water, and fold over to seal.

14

Press the edges with thumb and index finger to seal, then use a fork to seal completely and create a design.

15

Transfer the pies onto a baking tray and apply egg wash.

16

Poke holes in the pies with a fork to prevent them from exploding during baking.

17

Bake in a 350°F oven for 20 to 30 minutes or until golden brown.
