Wash the long-grain rice until the water runs clear, then set aside.
Boil hot water and pour it over the rice to parboil for about 5 minutes, then drain and set aside.
Blend together the onions, tomatoes, garlic, ginger, and bell pepper until smooth.
Heat vegetable oil in a pot and add diced onions; sauté until fragrant.
Add minced garlic and ginger, then incorporate the minced beef and cook until browned.
Add the blended mixture of peppers and tomatoes, along with the marinade from the grilled chicken.
Stir in curry powder, jollof rice seasoning, and seasoning cubes (initially adding four but reducing to two).
Add bay leaves and thyme, then pour in about 1/2 cup of water.
Add half of the pineapple chunks to the mixture and stir in the drained rice.
Cover the pot with foil and cook on low heat for about 20 minutes, checking occasionally to prevent burning.
After 20 minutes, add the remaining pineapple chunks and fluff the rice before serving.
