Traditionally used in Cantonese cuisine, it enhances seafood and stir-fries, embodying a fusion of flavors from dried seafood and cured meats. Today, XO Sauce is celebrated globally, often found in various Asian dishes, showcasing its versatility and rich umami profile.

Soak dried scallops and dried shrimp in warm water until softened, about 30 minutes.
Drain and finely chop the soaked scallops and shrimp.
Finely chop Jinhua ham, garlic, and shallots.
Remove seeds from red chili peppers and finely chop them.
Heat vegetable oil in a pan over medium heat until shimmering.
Add garlic, shallots, and red chili peppers; sauté until fragrant, about 2-3 minutes.
Stir in chopped scallops, shrimp, and ham; cook for 5-7 minutes until ingredients are well combined.
Add soy sauce, sugar, and rice wine; stir to combine.
Cook for an additional 5 minutes, allowing flavors to meld.
Remove from heat and stir in sesame oil.
Let the sauce cool before transferring to a jar for storage.
