Prepare the filling by finely chopping shrimp, pork, and leeks.
Add minced ginger, garlic, soy sauce, sesame oil, cornstarch, white pepper, and salt to the meat mixture.
Mix the filling thoroughly until well combined.
Place a wonton wrapper on a clean surface and add a small spoonful of filling in the center.
Moisten the edges of the wrapper with water and fold to seal, forming a triangle.
Bring the two corners of the triangle together and pinch to seal, creating a wonton shape.
Repeat until all filling is used.
Bring a pot of water to a boil and gently add the wontons.
Cook the wontons until they float to the surface, about 3-5 minutes.
Remove the wontons with a slotted spoon and drain.
Serve hot with a sprinkle of chopped green onions.
