Begin by removing any silver skin or excess fat from the pork tenderloin.

Cut the pork into bite-sized 2 centimeter cubes.

In a mixing bowl, marinate the pork with soy sauce, Shaoxing rice wine, salt, and bicarbonate of soda. Mix well and allow to marinate for at least 20 minutes or overnight.

Prepare the vegetables by cutting the bell peppers into bite-size squares or triangles, using half a red pepper and half a yellow pepper. Cut the onion into cubes and the spring onion into 2 centimeter lengths. Cut the pickles into bite-sized pieces.

To make the sweet and sour sauce, combine sugar, tomato ketchup, rice wine vinegar, a teaspoon of corn flour, salt, and chicken stock. Stir until the corn flour dissolves and set aside.

Prepare the batter for the pork by lightly beating an egg and coating the marinated meat with it. Then combine the corn flour and stir to coat all the pork pieces. Double coat the pork by removing and separating each piece and coating again with corn flour.

Fill a saucepan with enough oil to deep fry the meat. Check if the oil is hot by inserting a wooden spoon or chopstick and seeing if it bubbles.

Fry the pork in batches for 3-4 minutes until slightly golden. Let them rest for a minute, then fry again for 1-2 minutes until golden brown.

In a frying pan or wok, stir-fry the onions until translucent, then add the peppers, spring onion, and pickles (and pineapple if using). Add a little Shaoxing rice wine to help with stir-frying.

Stir-fry for 2-3 minutes, then pour in the sweet and sour sauce and bring to a boil. Add the pork pieces and stir to coat. Turn off the heat and serve immediately with plain boiled white rice.
