Slice the pork belly and soak it in water with a bit of salt for a couple of minutes to remove the frozen taste.
Prepare the sauce by mixing pineapple juice from the canned pineapple with sugar, corn flour, white vinegar, and ketchup.
Mix the sauce well and set it aside.
Marinate the pork in a mixing bowl with sugar, corn flour, white pepper, and soy sauce.
Cut the pineapple slices into small pieces and set them aside.
Rinse the marinated pork belly thoroughly and pat it dry.
Beat an egg in a bowl and add it to the pork belly, mixing well.
Coat the pork belly in corn flour on a tray, ensuring every piece is fully covered.
Set the deep fryer to 160°C and wait for the oil to reach the right temperature.
Add the coated pork belly to the deep fryer and fry until partially cooked.
Drain the partially cooked pork belly in the deep fryer basket and set the temperature to 190°C.
Once the temperature is reached, lower the basket to deep fry the pork belly until golden brown.
Turn on the heat in a pan and add the pineapple and sauce, letting it simmer until the sauce thickens.
Toss in the crispy pork belly and stir to coat every piece in the sauce.
Turn off the heat and move the dish to a plate, serving it with rice.
