Cut half a carrot into rounds and chop bell pepper and onion into chunky pieces.

Prepare the sweet and sour sauce by mixing three tablespoons ketchup, three tablespoons oyster sauce, two tablespoons white vinegar, one tablespoon fish sauce, one tablespoon brown sugar, and set aside.

Cut 600 grams of pork loin into strips.

Heat sunflower oil in a wok over above medium heat.

Add the pork to the wok and fry for about 6 minutes until it gets a nice color, stirring frequently.

Remove the pork from the wok and set aside, reducing the oil in the wok by about 50%.

Add half of the chopped onion, sliced garlic, and ginger to the wok on high heat and stir for 3 minutes.

Add the bell pepper and carrot to the wok and stir.

Return the pork to the wok and add black pepper, white vinegar, dark soy sauce, ketchup, oyster sauce, fish sauce, brown sugar, and a little water.

Stir everything together and add the remaining half of the onion.

Cook on high heat for an additional 4 minutes, stirring constantly until the sauce thickens. If too watery, add a slurry of corn flour and water.

Remove from heat and serve with plain steamed rice and garnish with green onion.
