1

Introduce the dish as Nigerian beef suya, a popular street food.

2

Use a needle tenderizer on the beef flank steak to make it tender and allow spices to penetrate.

3

Trim off any silver skin from the beef.

4

Place the beef on a cookie sheet and freeze for about 30 minutes to firm it up for easier slicing.

5

Prepare the spice blend called yajin coulee by mixing peanut butter powder, ground ginger, sweet paprika, onion powder, sea salt, garlic powder, cayenne, grains of paradise, black pepper, and cloves.

6

Grind the whole spices (grains of paradise, black pepper, cloves) in a spice grinder until fine.

7

Whisk the spice blend together for about 30 seconds and set aside.

8

After 30 minutes, slice the beef against the grain into strips about 1 inch wide and 2 inches long, then cut those strips crosswise into thinner pieces (1/8 to 1/4 inch thick).

9

Transfer the sliced beef to a bowl and drizzle with 3 tablespoons of avocado oil, massaging it into the meat.

10

Sprinkle half of the yajin coulee spice blend over the beef and massage to coat evenly, saving the rest for a sauce.

11

Cover the beef and refrigerate for at least 30 minutes, up to 8 hours.

12

Make a sauce with the remaining yajin coulee by adding about 4 tablespoons of oil, mixing well.

13

Preheat the grill while assembling the skewers by folding each piece of beef in half and threading it onto the skewers, packing them tightly.

14

Grill the skewers for about 5 minutes, then turn them to char the other side, ensuring good grill marks.

15

Cook for an additional minute on each of the other two sides until nicely charred.

16

Drizzle the sauce over the cooked skewers and serve with pickled red onion, lime wedges, diced tomato, and cilantro if desired.
