Soak osmanthus flowers in water for 30 minutes to release fragrance.

Strain and rinse the flowers, discarding the water.

Combine water and agar-agar in a saucepan over medium heat.

Stir until agar-agar dissolves completely, about 5-7 minutes.

Add sugar and stir until fully dissolved, about 3-4 minutes.

Incorporate lemon juice and a pinch of salt for flavor.

Remove from heat and mix in the soaked osmanthus flowers.

Pour the mixture into a mold and let it cool to room temperature.

Refrigerate for at least 2 hours until set.

Once set, remove from the mold and cut into desired shapes.

Serve chilled, optionally drizzled with honey.
