2 large eggs
4 cloves garlic, chopped
4-6 stalks (150 g) Chinese broccoli (gai lan), stems thinly sliced, leaves roughly chopped
3-4 Tbsp (45-60 ml) vegetable oil
2 Tbsp (30 ml) oyster sauce
1 Tbsp (15 ml) soy sauce
1 ½ tsp (7.5 ml) fish sauce
1 ½ tsp (7.5 ml) Golden Mountain sauce (or Maggi Seasoning)
2 tsp (10 ml) Thai black soy sauce
¼ tsp (1 ml) sugar
4 tsp granulated sugar
Ground white pepper, to taste
Optional: chili vinegar (prik nam som)

Mix together the meat, soy sauce, and sugar for marinating (omit if using shrimp or tofu).

If noodles are stuck together, peel them apart into individual strands. Divide noodles into individual portions (8 oz/225 g per portion).

Combine all sauce ingredients and stir to mix well, dividing the sauce into individual portions.

Heat 1 Tbsp of oil in a well-seasoned wok or large cast iron skillet over high heat. Add protein and sear until browned, then remove from the pan.

For best results, cook one portion at a time: In the same wok, add 1½ Tbsp oil and garlic, stirring until golden.

Add cooked protein back into the pan without meat juices and toss briefly. Turn off heat.
