2 stocks lemongrass finely chopped
2 tbsps paprika
2 tbsps fish sauce
2 tbsps toasted rice powder
1 to 2 tbsps chickpea flour
100 g rice vermicelli noodles
hard-boiled eggs halved
crispy fried shallots
fresh coriander/cilantro leaves
sliced banana stem or heart
lime wedges
chili flakes or oil
crushed dried chili
