Egg whites are lower in calories and cholesterol.

Put the frying pan on the heat.

Add 6 eggs into a bowl.

Add a splash of evaporated milk (about 50 ml) to the eggs.

Add a knob of butter to the frying pan.

Add a little drop of olive oil to the frying pan to prevent the butter from burning.

Remove the toast from the griddle pan and set aside.

Add a generous pinch of salt and pepper to the eggs.

Beat the eggs together with a fork.

Pour the egg mixture into the frying pan.

Use a wooden spoon to keep the eggs moving around the pan.

Cook the eggs until they are still runny, then flatten them out in the pan.

Let the eggs rest off the heat to finish cooking with residual heat.

Chop the eggs a bit if they are lumpy after resting.

Serve half of the scrambled eggs on a plate.
