Prepare the beef flank steak by flattening it out to create a larger surface area.
Season the beef with salt and black pepper on both sides.
Spread mustard evenly over the beef.
Layer bacon slices on top of the mustard.
Add rings of red onion on top of the bacon.
Add pickles, carrots, and slices of pear for sweetness and acidity.
Roll the beef tightly, ensuring it is compact and secure.
Use kitchen twine or toothpicks to secure the rolls tightly.
Heat oil in a skillet over medium heat and brown the beef rolls on all sides.
Remove the rolls from the skillet and set aside.
In the same skillet, add diced celery, carrots, and onion; sauté until softened.
Deglaze the skillet with red wine, scraping up any browned bits.
Return the beef rolls to the skillet and add beef broth and tomato paste.
Bring to a simmer, cover, and reduce heat to low.
Cook for 1.5 to 2 hours until the beef is tender.
Remove the rolls and let them rest for a few minutes before slicing.
