Start with 1 pound of fresh bison from US Wellness Meats, which is very lean.

Add 1/4 cup finely chopped apricots, 1/4 cup dried apricots, and 1/4 cup sliced almonds to a bowl.

Pour in a shot of fresh honey and mix all ingredients in the bowl.

Spread the 1 pound of ground bison evenly over two cookie sheets.

Place the cookie sheets in the oven at 180 degrees Fahrenheit for 6.5 hours to dry the meat.

After 6.5 hours, remove the bison from the oven and place it in a food processor to grind it into a fine powder.

Add 1/4 cup of apricots, 1/4 cup of almonds, and 1/4 cup of dried cranberries to the ground bison in the food processor and blend until the fruit is in tiny pieces.

Roughly chop additional apricots and cranberries and add them to the mixture for larger chunks.

Add 1/4 cup of Maillard seasoning to the mixture and stir well.

Take a cookie pan and divide the mixture in half, spreading it out on one side of the pan.

Add a dash of cayenne pepper to the leftover mixture and mix it around for a kick.

Place the mixture in the fridge to harden before slicing it into bars.
