Servings4
1 cup beef tallow
2 cups elk burger (ground)
1/2 cup dried blueberries
1/2 cup dried dates
1/2 cup pecans
1/2 tsp salt

Quantities are estimated based on standard recipes for your convenience. The actual ingredients used in this video are accurate.

1

Cut beef fat into strips and run it through a grinder.

2

Put the ground fat into a crock pot to render.

3

Set the crock pot on low for 10 hours to render the tallow.

4

Strain the rendered tallow through a colander lined with cheesecloth.

5

Spread elk burger on dehydrator trays between wax paper for even drying.

6

Set the dehydrator to 155°F and dry the meat until it is crumbly.

7

Check the meat for dryness; it should break easily when bent.

8

Once the tallow is rendered, strain out any solid bits and store the excess in jars.

9

Blend the dried elk burger into a fine powder.

10

Add dried pecans and blend until ground up.

11

Freeze dried fruit or freeze regular dried fruit before blending to avoid gumminess.

12

Mix equal parts of meat powder, nuts, and fruit by volume in a bowl.

13

Add melted beef tallow to the dry mixture until it holds together.

14

Taste and adjust salt as needed.

15

Pack the mixture into a tray and refrigerate until hardened.

16

Cut the hardened pemmican into bars.
