Cultural Context

Pemmican is a traditional Native American food that was used by Indigenous peoples as a high-energy, portable food source, especially during long journeys or hunting trips.

Servings4
1 lb (16 oz) beef tallow
6 oz freeze-dried blueberries
1 package machaka (beef, water, seasonings)
1

Get the beef tallow over some flame to soften it up.

2

Powder the freeze-dried blueberries using a blender or mortar and pestle.

3

Use the full 6 oz of freeze-dried blueberries to make blueberry powder, but set some aside if desired.

4

Open the machaka and blend a portion of it before transferring to a mixing bowl.

5

Put on gloves and drizzle the liquefied beef tallow into the bowl with the powdered ingredients.

6

Mix the ingredients with hands, adding more beef tallow as needed until the mixture holds its shape.

7

Decide on the form factor for the final product: either press into a casserole dish or form into balls.

8

If using a casserole dish, refrigerate for a couple of hours before cutting into bars; if making balls, form them and refrigerate until hard.

9

Wrap the pemkin balls in parchment paper and secure with copper wire for storage.
