Peri Peri Chicken

Originating from the Portuguese colonies in Africa, Peri Peri Chicken has become a beloved dish in many cultures, particularly in South Africa and Mozambique. The dish is known for its spicy, tangy flavor profile, thanks to the chili peppers used in the marinade. Today, it enjoys global popularity, with various adaptations and interpretations found in restaurants and homes around the world.
Quantities are estimated based on standard recipes for your convenience. The actual ingredients used in this video are accurate.
Start by making the marinade for the chicken.
Add vegetable oil to a bowl for the marinade.
Add minced garlic to the bowl.
Add onion powder to the bowl.
Add smoky barbecue sauce to the bowl.
Add Worcestershire sauce to the bowl.
Season with salt and pepper.
Add chili flakes to the bowl instead of sriracha.
Squeeze in lemon juice using a lemon squeezer.
Add mustard to the marinade.
Whisk all the ingredients together until well combined.
Taste the marinade and adjust seasoning if necessary.
Reserve a quarter of the marinade for later use.
Open the package of the whole chicken and prepare to spatchcock it.
Use kitchen scissors to cut out the backbone of the chicken.
Cut down one side of the backbone and then the other to remove it completely.
Flatten the chicken by pressing down on the breastbone.
Trim any excess fat from the chicken that you don't want to keep.
Pat the chicken dry with paper towels to help the marinade stick better.
Place the chicken in a Ziploc bag for marinating.
Pour three-quarters of the marinade over the chicken in the bag.
Seal the bag and ensure the chicken is well coated with the marinade.
