In a mixing bowl, add 2 cups of wheat flour, salt to taste, and water as required to make a soft dough. Cover the dough and keep it aside for 30 minutes.

In a mixing bowl, add 3 medium-sized boiled and mashed potatoes. Add 1/4 teaspoon of cumin seeds, 1 teaspoon of coriander powder, 1 teaspoon of red chili powder, 1 teaspoon of garam masala, and salt to taste. Mix everything well to form a smooth mixture.

Once the dough has rested, take a small portion of the dough and roll it into a ball. Flatten the ball and dust it with some flour. Roll it out into a small circle. Add a spoonful of the potato filling in the center of the circle. Bring the edges of the circle together to cover the filling and form a ball. Dust the ball with flour and roll it out gently into a paratha.

Heat a griddle or pan on medium-high heat. Place the paratha on the griddle or pan and cook it for 2-3 minutes. Flip it over and cook the other side for 2-3 minutes. Apply some ghee or oil on both sides and cook the paratha until it's golden brown.
