½ tsp salt

In a large mixing bowl, add 2 cups wheat flour, 2 Tbsp yogurt and a pinch of salt. Mix and knead into a crumbly dough texture.

Slowly add just enough water for the dough to come together and knead it until you have a soft, smooth dough.

Grease the dough with ghee, cover it, and set it aside for later.

In a separate large bowl, mix 1 cup of boiled and mashed potatoes with ½ cup finely chopped onions, 1 Tbsp finely chopped green chilies, 2 Tbsp finely chopped coriander leaves, ½ tsp cumin seeds, ½ tsp garam masala, 1 tsp red chili powder, ¼ tsp coriander powder, and ½ tsp salt.

Mix all of the ingredients together thoroughly until evenly distributed.

Divide the dough into small portions, rolling each portion into a small 2 inch ball.

Take one of the dough balls, flatten it slightly, and roll it out to about 4 inches in diameter.

Place about 2 tablespoons of the potato filling in the center of the rolled-out dough.

Carefully bring the edges of the dough to the center to seal the filling inside, forming a stuffed ball.

Gently flatten the stuffed ball and roll it out again to about 6-8 inches in diameter, taking care not to break and let the filling spill out.

Heat a tawa over medium heat. Place the flattened aloo paratha on the tawa and cook it for 1-2 minutes on one side.

Flip the paratha and add a little bit of ghee around the edges. Cook for 1-2 minutes until both sides are golden and crispy.

Remove from the tawa and serve hot with yogurt, pickle, or your favorite chutney.
