In a bowl, add 2 cups of wheat flour, some salt, and 1 tbsp of oil. Gradually add water, little at a time, and knead to make a soft and smooth dough. Cover and let it rest for 20-30 minutes.

While the dough is resting, boil 2-3 medium-sized potatoes, peel the skin, and mash them well.

In a pan, heat oil and sauté 1 finely chopped onion with some salt until translucent. Add chopped green chilies, cumin powder, chili powder, garam masala, and amchur powder. Mix well and add the mashed potatoes and chopped coriander leaves. Combine until well mixed and allow to cool.

Take a small portion of the dough, dust it with flour, and roll it out. Place some potato filling in the center, gather the corners, and seal the dough. Roll it gently into a circle of 6-8 cm in diameter.

Heat a tawa, place the paratha, and cook over medium heat. Flip when brown spots appear and cook until nicely done. Optionally, spread some oil or ghee on top.
