Peel all of the potatoes.

Cut the potatoes into 1 centimeter (or half inch) cubes, keeping them similar in size for even cooking.

Add the potato cubes to a mixing bowl and add the vegetable oil, half of the salt, and half of the pepper. Mix until evenly coated.

Preheat the oven to 180 degrees Celsius.

Pour the potatoes onto a nonstick foil lined tray and space them evenly.

Bake the potatoes in the oven for 30 to 50 minutes until golden brown and crispy.

While the potatoes are baking, prepare the seasoning mixture by peeling and finely mincing the garlic cloves.

Wash the red chili and cut it into thin round slices, removing the seeds if the chili is particularly hot.

Wash and finely chop about 10 to 15 stalks of coriander, leaving out the ends of the stalks and breaking up any large leaves with horizontal cuts.

Slice the lemon in half and juice it, catching any seeds.

In a small saucepan over medium heat, add the olive oil, followed by the minced garlic and red chilies.

Add the remaining salt, pepper, paprika, and chili powder to the saucepan and stir until combined. Cook for about 30 seconds to 1 minute until the garlic is cooked through.

Immediately add the cooked garlic mixture to the toasted potatoes, followed by the lemon juice and a handful of chopped coriander. Mix everything together, scraping from the bottom to ensure even coating of the potatoes.

Pour the potatoes into a serving bowl and top with more coriander and a few more chili slices.
