Mix together 1/2 teaspoon salt, 1/4 teaspoon black pepper, 1/4 teaspoon cayenne pepper, 3/4 teaspoon onion powder, and 1/4 teaspoon garlic powder in a bowl.
Add 2 tablespoons of olive oil to the spice mix and stir to combine.
In a large bowl, add the cubed potatoes and pour the spice mix over them.
Toss the potatoes with the spice mix using your hands, ensuring they are well coated.
Spray the bottom of the air fryer with oil spray (avoid aerosol cans to prevent damage).
Transfer the seasoned potatoes to the air fryer basket and spread them out evenly.
Air fry the potatoes at 400°F for 18 minutes, shaking the basket halfway through at the 9-minute mark.
Check the potatoes at around 16 minutes to ensure they are not overcooking; if needed, air fry for an additional couple of minutes.
To make the sauce, heat a small saucepan over medium heat and add 2 tablespoons of olive oil.
Once the oil is hot, add 1 teaspoon of minced garlic and sauté until fragrant, ensuring it doesn't burn.
Add 1/4 teaspoon of cayenne pepper to the garlic, stirring carefully to prevent burning.
Stir in 1/2 cup of chopped cilantro, coating it with the oil.
Add 1 teaspoon of paprika and 1 teaspoon of lemon juice to the mixture, stirring to combine.
Turn off the heat once the sauce is ready.
Transfer the air-fried potatoes to a large bowl and pour the cilantro sauce over them.
Mix everything together until the potatoes are completely coated with the sauce.
Serve immediately for the best taste, or cook the potatoes slightly less if preparing ahead of time.
