Cut Yukon potatoes into one and one and a half inch cubes, keeping the skin on.
Rinse the diced potatoes to remove excess starch and dry them with a towel.
Transfer the dried potatoes to a baking dish and season with 1 teaspoon of salt and 1 tablespoon of olive oil.
Mix the potatoes with salt and olive oil until well combined.
Roast the potatoes in the oven at 450 degrees for 30 minutes, flipping halfway through.
While the potatoes are roasting, prepare the sauce by heating olive oil in a pan and adding 3 cloves of garlic, lightly frying until fragrant.
Add 1 teaspoon of crushed red pepper and half a cup of chopped cilantro to the garlic and mix together.
Once the potatoes are done, toss them immediately with the garlic cilantro sauce.
Transfer the potatoes to a serving dish and garnish with additional crushed red pepper and fresh cilantro, along with a drizzle of lemon juice.
