3/4 cup carrot
3/4 cup cabbage
4 cups cooked basmati rice
2 tbsp light soy sauce
2 tbsp oyster sauce
1 tbsp ketjap Manis
few drops fish sauce
1/4 cup spring onion (greens)

Slice up your onion, finely chop those garlic cloves, slice some fresh chillies, cut your smoked tuna, julienne the carrot, slice up a bit of cabbage and some spring onions.

In a pan on medium heat, add oil. Once oil is nice and hot add onion and curry leaves. Stir till your kitchen smells amazing and the onions turn soft and slightly golden.

Now toss in garlic, fresh chillies, and that smoky, delicious tuna. Give it a good mix for about 1–2 minutes.

Add in your carrot and cabbage, and stir-fry for another minute or two.

Add your cooked basmati rice. Sprinkle in some black pepper powder and mix everything till it’s beautifully combined.

Pour in light soy sauce, oyster sauce, and a splash of kecap manis. Stir well for a couple of minutes so every grain gets coated.

Add a few drops of fish sauce, mix again, and finish it off with some fresh spring onion greens.
