Tuna Pizza

3 medium-sized onions
3 medium-sized tomatoes

2 tablespoons olive oil

12 oz canned tuna in water
shredded cheese (like mozzarella or Swiss cheese)
sliced black olives

Thinly slice the onions.

Cut the tomatoes in half and grate the pulp using the big holes in the grater, discarding the skin.

Drizzle olive oil in a flat pan and add the sliced onions, sprinkling salt on top. Cover and cook on medium-low heat until caramelized.

Place the grated tomatoes with their juices in a saucepan, add tomato paste, salt, pepper, and thyme. Cook covered on medium heat until you get a dry tomato sauce, about 45 minutes.

When the onions start browning, reduce the heat to very low and cover them to let them caramelize.

After 45 minutes, check the tomato sauce; it should be thick. Taste and adjust spices as needed.

Once the onions are fully caramelized, place them in a bowl to cool down along with the tomato sauce.

Sprinkle flour on your working station and rolling pin, then roll out the puff pastry.

Cut the extra dough using a fork and poke mini holes in the dough.

Cover the dough with foil and add beans in the center to prevent puffing during baking.

Preheat the oven to 400°F.

Bake the crust for 45 minutes.

To assemble the pizza, first place the tomato sauce on the crust, then add the caramelized onions, tuna chunks, olives, and finally the cheese.

Place the assembled pizza back in the oven for 5 minutes to melt the cheese.

Serve immediately or wrap in foil and plastic to freeze for up to 2 months.
