Tuna Sushi

2 tbsp rice vinegar
1 tsp sugar
½ tsp salt
6 oz sushi-grade tuna, finely diced
1 tbsp Japanese mayo
½ tsp soy sauce
½ tsp lemon juice
Diced cucumber
Diced avocado
Thin nori sheets
Soy sauce for dipping
Wasabi for dipping
Sriracha mayo for dipping

Prepare sushi rice by combining warm cooked rice with rice vinegar, sugar, and salt, mixing gently to avoid smashing grains.

Thaw the sushi-grade tuna and mix with Japanese mayo, soy sauce, and lemon juice.

Prepare fillings by dicing cucumber and avocado.

Lay a sheet of nori on a flat surface and spread a thin layer of sushi rice over it.

Add the tuna mixture, cucumber, and avocado on top of the rice.

Roll the nori tightly around the fillings, using parchment paper if needed to help with rolling.
