1 tablespoon special dark soy sauce
1 tablespoon plus one teaspoon roasted sesame seeds
1 tablespoon finely grated ginger
1 tablespoon of sake
3 tablespoons sesame oil
2 1/4 teaspoons salt
1 tablespoon high temperature cooking oil

Marinate the beef with 1 tablespoon of minced garlic, 1 whole chopped scallion, 1 tablespoon of brown sugar, 2 tablespoons of soy sauce, 1 tablespoon of special dark soy sauce, 1 tablespoon of sesame oil, and 2 teaspoons of salt.

Cook the marinated beef in a pan with 1 tablespoon of high temperature cooking oil until fully cooked.

In a separate pan, sauté the sliced shitake mushrooms with 1 teaspoon of minced garlic, 1 tablespoon of sesame oil, and 1/4 teaspoon of salt until tender.

Blanch the baby spinach in salted water, then drain and mix with 1 teaspoon of sesame oil, 1 tablespoon of roasted sesame seeds, and 1/2 of a finely minced scallion.
