1 medium white radish, cut into thick strips
½ cup rice vinegar
½ cup rice wine
4-5 black peppercorns
¼ cup castor sugar
¼ tsp turmeric powder

2 cups cooked short grain rice

200 grams boneless chicken legs, cut into thin strips
Crushed black peppercorns to taste
1 tbsp chopped garlic
1 tsp soy sauce
2 tsps brown sugar
4 eggs
3 tsps oil + for brushing
1 medium carrot, cut into thin strips
4 nori sheets
10-12 spinach leaves, blanched
Toasted white sesame seeds to sprinkle

To make pickled radish, heat 1 cup water in a small nonstick pan, add rice vinegar, rice wine, black peppercorns, castor sugar, turmeric powder and salt, boil for 30 seconds.

Transfer it in a deep dish, add radish and let it cool to room temperature.

Transfer this mixture in an air tight jar and set aside for 3-4 days in a dark place.

For kim baap, take rice in a bowl, add salt and 2 tsps sesame and mix well.

Take chicken in a bowl, add salt, pepper, garlic, soy sauce, remaining sesame oil, brown sugar and mix well.

Break eggs in a bowl, add salt and whisk well.

Heat a nonstick pan and brush the pan with oil, add a portion of egg and cook for a minute. Then roll the egg in pan, brush some oil in the pan and pour another portion of egg on the pan, cook for a minute then roll the egg in opposite direction. Similarly repeat the process until all the whisked eggs are used. Set aside.

In the same pan heat 1 tsp oil and add carrots, salt and toss for a minute. Remove and set aside.

Heat remaining oil in the pan, add marinated chicken and cook on high heat for 4-5 minutes. Cut the prepared egg roll into thick strips.

Place a nori sheet on a sushi mat, add a portion of rice and spread on ¾ of the nori sheet.

Add a portion of chicken on one side of the nori sheet, add layers of carrots, egg, spinach and place 3-4 pickled radish slices on it.

Apply some water on the edge of nori sheet and tightly wrap it in. Brush sesame oil on the nori sheet and sprinkle sesame seeds on top. Cut into ½ inch slices and serve immediately.
