Jain Pav Bhaji is a variation that omits certain ingredients like onions and garlic, adhering to Jain dietary restrictions. 2 tablespoons pav bhaji masala
1 teaspoon coriander powder
1 teaspoon cumin powder
1/2 teaspoon turmeric
1 cup green peas
1 cup bell peppers
1/4 cup fresh coriander
1 lemon

In a pressure cooker, add all the vegetables including cauliflower, cabbage, tomatoes, and raw bananas.

Add a lot of water, salt, and Kashmiri red chili; mix well.

Pressure cook for about 2-3 whistles.

Once the cooker cools down a bit, mash the boiled vegetables using a masher.

To make a red chili paste, soak Kashmiri red chili in hot water for about an hour, then blend with a little salt until smooth.

In a large tava, add a lot of butter and some oil for the bhaji.

Add the green chili paste and sauté well.

Add the prepared red chili paste and sauté again, adding a little water to prevent burning.

Add salt, red chili powder, coriander powder, cumin powder, a little turmeric, and pav bhaji masala to the mixture.

Mix well and sauté on the tava, adding a little water as needed.

Add boiled green peas and chopped bell peppers, and let it cook for a while.

Incorporate the mashed boiled vegetables into the mixture and let it cook on low heat, mashing further if desired.

Finally, add a little butter and fresh coriander, mixing well.

Toast the pav by cutting it in half and adding butter on the tava until golden brown.

Serve the bhaji on a plate with the toasted pav, along with a salad of cabbage and tomatoes, lemon, and butter cubes.
