Jain Pav Bhaji

Traditionally, it was a meal for the working class, made from leftover vegetables and served with buttered bread rolls (pav). Jain Pav Bhaji is a variation that omits certain ingredients like onions and garlic, adhering to Jain dietary restrictions. Today, this dish is enjoyed across India and has inspired numerous adaptations worldwide, reflecting its universal appeal.

1 small cauliflower
1 cup green peas

Boil 3 raw bananas until tender.

Boil a small cauliflower until tender.

Boil 1 cup green peas slightly.

Remove the peels from the boiled bananas and mash them lightly.

Mash the boiled cauliflower lightly.

Press the green peas lightly.

Prepare a puree from 2-3 long red chillies by churning them in a mixer.

In a pan, heat 1 tbsp butter and some oil.

Add cumin seeds to the pan as it heats.

Add a pinch of asafoetida for flavor.

Add finely chopped medium-sized capsicum and green peas to the pan.

Add salt to taste.

Add 1/2 tsp turmeric powder, 1 1/2 tsp Kashmiri chili powder, and 1 1/2 tsp coriander powder.

Cover the pan and let the vegetables cook for 5 minutes.

After 5 minutes, mash the peas and capsicum lightly.

Add the prepared chili paste to the pan.

Add tomato puree made from 5 medium-sized tomatoes to the pan.

Cover and cook on medium flame for 10 minutes until the puree is cooked.

Check to ensure the tomatoes are cooked well.

Add 1 tsp Pav Bhaji Masala to the mixture.

Garnish with lots of coriander leaves and mash the mixture again.

Add the mashed cauliflower and boiled raw bananas to the pan.

Mash the mixture once more before adding water gradually.

Let the Pav Bhaji cook.

Prepare a tempering by adding 1 tbsp butter in a separate pan.

Add 1 tsp cumin seeds and some Pav Bhaji Masala to the tempering.

Fry the Pav Bhaji Masala in butter for flavor.

Add the tempering to the Pav Bhaji.

Serve the Jain Pav Bhaji with butter Pav and cucumber salad.

Squeeze some lime juice on top along with coriander leaves and top with some butter.
