Cut pork shoulder into large chunks and season with salt, black pepper, cumin, and oregano.
Heat olive oil in a large pot over medium-high heat until shimmering.
Add seasoned pork to the pot and brown on all sides, about 5-7 minutes.
Remove browned pork from the pot and set aside.
In the same pot, add chopped onion, garlic, and bell pepper; sauté until softened, about 3-4 minutes.
Stir in diced tomatoes and cook for an additional 2 minutes until fragrant.
Return the browned pork to the pot and add bay leaves and chicken broth; bring to a simmer.
Cover the pot and reduce heat to low; cook for 1.5 to 2 hours until pork is tender.
While pork is cooking, peel and cut yuca into chunks.
Add yuca to the pot during the last 30 minutes of cooking, ensuring it is submerged in the broth.
Adjust seasoning with salt, black pepper, and lime juice to taste.
Once cooked, remove bay leaves and stir in chopped cilantro before serving.
