Slice the chuck eye steak into four strips and then cut them into bite-sized chunks.
Transfer the meat to a ziploc bag.
Season the meat with salt, black pepper, rosemary, chili flakes, paprika steak seasoning, minced garlic, 1/4 cup of red cooking wine, and avocado oil.
Massage the marinade into the meat and set it aside to marinate for at least an hour.
Chop the peppers and onions to be roughly the same size as the meat.
Pre-soak skewers in water for as long as possible to prevent burning on the grill.
Skewer the marinated meat and chopped vegetables.
Heat the grill to 450° Fahrenheit.
Cook the skewers on the grill for 10 minutes, flipping every 2 to 3 minutes for even charring.
Check for doneness; for well done, cook for 12 to 13 minutes.
