Clean the turkey with 1 tablespoon of salt and juice from 2 large limes, letting it sit for 5-10 minutes.

Marinate turkey with 3 tablespoons Haitian seasoning, 1 crushed Maggie cube, 1 packet seasoning goya, 1/4 teaspoon cayenne pepper, 1/2 teaspoon salt, 1/2 teaspoon black pepper, 2 pinches ground clove, and 4 crushed cloves of garlic; mix well.

Heat 4 tablespoons of olive oil in a non-stick pot and add the marinated turkey.

Add 2 cups of water to the pot and a small chopped tomato, spreading it evenly.

Add 3 sticks of thyme and 3 sticks of parsley, cover, and cook for 30 minutes.

After 30 minutes, add 2 more cups of water, stir, and cover again, cooking for another 20 minutes.

Remove the turkey pieces carefully to avoid breaking them, and strain the liquid to separate it from the solids.

Rinse the pot, then heat 4 tablespoons of olive oil and add 2 tablespoons of tomato paste, frying it until it loosens up, adding water as needed.
