Chop 1 cup of Chinese chives finely.

Mince 2 cloves of garlic and 0.5 tablespoon of ginger.

Make a cornstarch slurry by mixing 2 tablespoons of cornstarch with 3 tablespoons of water.

In a large mixing bowl, combine 1 pound of ground pork, chopped Chinese chives, minced garlic, minced ginger, 2 tablespoons of soy sauce, 1 teaspoon of sesame oil, 0.25 teaspoon of salt, 0.25 teaspoon of white pepper, and the cornstarch slurry. Stir to combine.

Scoop about half a tablespoon of filling and place it in the center of a dumpling wrapper. Wet the edges with water and fold to seal the dumpling. Alternatively, use a dumpling press to seal.

Repeat the filling and sealing process with the remaining filling and wrappers, placing the dumplings aside until ready to cook.

Bring a large pot of water to boil over high heat. Once boiling, reduce heat to medium and drop in dumplings in batches of 8 to 10, stirring quickly. Cook until the dumplings float to the top, about 3 to 5 minutes, then scoop them out with a slotted spoon.

For pot stickers, heat 2 tablespoons of oil in a non-stick pan over medium heat. Add dumplings evenly spaced apart. Once they have a nice sear on the bottom, add 1 tablespoon of water to the pan and cover with a lid. Let steam for about 2 to 3 minutes, then remove from heat.

To air fry, preheat the air fryer for 5 minutes at 200 degrees Celsius (400 degrees Fahrenheit). Brush dumplings with vegetable oil to ensure they are fully coated. Place dumplings in a single layer in the air fryer basket and air fry for 6 to 7 minutes at 200 degrees Celsius (400 degrees Fahrenheit).

Optional: For soup, boil chicken bones with aromatics like onion and ginger, then add salt to taste.

If you have uncooked dumplings left, freeze them by placing them evenly spaced on a baking sheet lined with parchment paper. Freeze for about 10 minutes before transferring to a bag or container for longer storage.
