Marinate the skewered intestines in a mixture of vinegar, minced garlic, and black pepper for at least 30 minutes.

Heat oil in a deep frying pan over medium-high heat until shimmering.

Fry the skewered intestines in batches until golden brown and crispy, about 5-7 minutes.

Remove the skewers from the oil and drain on paper towels.

Serve hot with chili sauce and calamansi on the side.
