2 teaspoons coriander powder

Start by peeling the garlic cloves. Cut from both ends to make peeling easier.

Chop the onions by cutting from both ends to remove the skin easily.

Grate the tomatoes using a grater to make a puree.

Grate the onions and garlic as well for the gravy.

Grate the ginger similarly.

Heat a pan on the stove and add oil (can use mustard oil).

Add whole spices: a small piece of cinnamon, 2 cloves, 1 cardamom, and a bay leaf to the hot oil until they start to crackle.

Add the grated onions to the pan and sauté until they become translucent.

Add the grated ginger, garlic, and green chilies to the pan and sauté until fragrant.

Add 1 teaspoon of kasuri methi to the mixture for flavor.

Add the grated tomato puree to the pan and cook until the oil separates from the mixture.

Add the following spices: 1/2 teaspoon turmeric powder, 1 teaspoon red chili powder, 2 teaspoons coriander powder, and 1 teaspoon garam masala. Mix well.

Add salt to taste and stir the mixture well to combine all the spices.

Add about 1/2 liter of water to the pan and bring to a boil for the gravy.

While the gravy is boiling, crack the eggs into a bowl and whisk them together with 1 tablespoon of chopped onion and 1 tablespoon of chopped green chilies.

Heat another pan and add 2-3 tablespoons of oil and 1/2 teaspoon of cumin seeds.

Pour the whisked egg mixture into the pan and cook until set, flipping once to cook both sides.
