3 bay leaves

4 tbsp oxtail broth
1 chopped onion
1 tsp salt
1/4 tsp black pepper
4 tbsp tomato paste
1 tsp Royco usavi mix

Add 1 kg of pre-washed oxtail to a pressure cooker.

Pour in 3 cups of cold water, add 1 tbsp of apple cider, 3 bay leaves, and a few whole black peppercorns.

Pressure cook for 1 and 1/2 hours.

Separate the oxtail broth into a jug after cooking.

In a separate pan, add 4 tbsp of oxtail broth, 1 chopped onion, 1 tsp of salt, and 1/4 tsp of black pepper.

Fry the onions over medium heat until soft and golden.

Add 4 tbsp of tomato paste to the pan and stir.

Start adding the reserved broth back into the pan.

Add the oxtail back into the sauce, ensuring it's covered.

Add 1 to 2 cups of the broth back into the sauce depending on desired sauce amount.

Cover the pot and reduce the sauce for about 10 to 15 minutes.
