Soak rice wrappers in warm water until pliable.
Lay the softened rice wrapper on a clean surface.
Place a few shrimps in the center of the rice wrapper.
Add a small handful of dried vermicelli noodles on top of the shrimp.
Layer lettuce, Thai basil, mint, and shredded carrots on top of the vermicelli.
Fold the bottom of the rice wrapper over the filling, tucking it in tightly.
Fold in the sides of the rice wrapper to enclose the filling.
Roll the rice wrapper away from you to form a tight cylinder.
Repeat with remaining ingredients until all are rolled.
Serve immediately with hoisin-peanut dipping sauce.
