500 gr puff pastry
1 tbsp butter
1 tbsp all purpose flour
1 tsp mustard
Pinch salt
125 ml milk
100 gr grated cheese
1 egg, beaten

Preheat your oven to 195 C - 380 F and line a baking sheet with parchment paper.

Melt the butter in a small pan without letting it cook. Add the flour, mustard, salt and milk and stir well. Keep stirring while letting the mixture thicken for about 5 minutes on a low fire. Then take the pan off the fire.

Cut the sheets of puff pastry in half. One half will be the bottom, the other half the top. Place 1 tbsp of the sauce on the bottom. Top with grated cheese. Make sure you keep the sides clear from cheese, about 1 cm. then put the top half on top and press the sides together. Brush beaten egg on each pastry. Sprinkle some grated cheese on top.

Bake in preheated oven for about 15 to 20 minutes until golden brown.
