Mix all-purpose flour and salt in a bowl.
Add ghee to the flour mixture and rub until crumbly.
Gradually add water and knead into a smooth dough.
Cover the dough with a damp cloth and let it rest for 30 minutes.
In a pan, heat ghee and add mixed dry fruits, sauté for a few minutes.
Add sugar, cardamom powder, and coconut, mixing well.
Cook until the mixture thickens, then remove from heat.
Divide the dough into small balls and roll each into a thin circle.
Place a spoonful of the filling in the center of each circle.
Fold the dough over to form a half-moon shape and seal the edges.
Heat oil in a deep pan for frying.
Fry the karanjis until golden brown on both sides.
Remove and drain on paper towels.
Serve warm, garnished with chopped almonds and saffron.
