In a bowl, combine 3 cups of all-purpose flour with 1 teaspoon of salt and 2 teaspoons of sugar, mixing well.

Gradually add lukewarm water to the flour mixture, squeezing the dough to bring it together.

Knead the dough for about 2 to 3 minutes until it comes together, then set aside.

Empty the contents of a 12-ounce packet of boneless salt fish into a bowl and rinse with water to remove some salt.

Add the rinsed salt fish to a pot of boiling water and let it boil for 15 to 20 minutes to soften.

After boiling, strain the salt fish and flake it into smaller pieces using hands or a fork.

In a heated pot, add vegetable oil and sauté chopped onion, garlic, and pimentos for about a minute.

Add the flaked salt fish to the sautéed vegetables and mix well to incorporate everything.

Add in the cubed tomatoes and mix well, then add a little water to keep the mixture moist, cover, and let it cook for 5 minutes.

After 5 minutes, mash some of the tomato pieces with the back of a spoon if desired, then add a bit more water, cover, and cook for an additional 10 minutes.

Divide the rested dough into two equal parts and roll out each piece on a floured surface to your desired thickness.

Cut the rolled dough into smaller pieces for dumplings, aiming for about 30 dumplings total.

Add the dumpling pieces to a pot of boiling water, mixing to prevent sticking, and boil for 15 to 20 minutes.

Once the dumplings are done, strain them and assemble the dish with the salt fish.
