Mansaf is a traditional Jordanian dish that symbolizes hospitality and generosity, often served during special occasions and gatherings. Originating from the Bedouin culture, it features tender lamb cooked in a rich yogurt sauce, served over rice and flatbread. Today, Mansaf has become a beloved national dish, enjoyed by families and friends across Jordan and beyond, often accompanied by stories and laughter around the table.

Marinate lamb with spices and yogurt for at least 2 hours.
Heat ghee in a large pot over medium heat until shimmering.
Brown the lamb pieces on all sides for about 5-7 minutes.
Remove lamb and set aside; add chopped onions to the pot.
Sauté onions until translucent, about 3-4 minutes.
Add garlic and cook for another minute until fragrant.
Return lamb to the pot and cover with water; bring to a boil.
Reduce heat and simmer for 1.5-2 hours until lamb is tender.
In a separate pot, cook rice according to package instructions.
Prepare jameed by dissolving it in warm water until smooth.
Once lamb is cooked, strain the broth and reserve it for serving.
Layer flatbread on a large serving platter.
Spread cooked rice over the flatbread, then top with lamb pieces.
Drizzle jameed sauce over the lamb and rice.
Garnish with toasted pine nuts, almonds, and parsley before serving.
