Combine flour, yeast, and salt in the bowl of your mixer and whisk well until combined.

Add water, beer, and apple cider vinegar to the mixture.

Mix with your dough hook until combined, forming a shaggy dough.

If the dough is too sticky, add flour 1/4 cup at a time until you can form a ball.

Generously flour the bottom of a bowl and place the sticky shaggy dough into it, trying to form a ball shape.

Cover the bowl with plastic wrap and let the dough rise overnight for 12 to 14 hours.

After 12 to 14 hours, remove the plastic wrap and stretch and fold the dough three to four times before replacing the plastic wrap.

Let the dough rest for 30 minutes.

Preheat your pot and oven to 450 degrees Fahrenheit.

Once preheated, generously flour the bottom of the pot and place the dough into it.

Generously sprinkle the top of the dough with flour.

Replace the lid and put in the oven for 30 minutes.

After 30 minutes, remove the lid and return the pot to the oven for another 5 to 15 minutes until the desired color is reached.

Remove the bread and let it cool on a cooling rack.
