Zucchini & Sweet Potato Fritters with Smoked Salmon

In a bowl, combine self-raising flour, sweet potato, zucchini, and 2 whole eggs.
Add half a teaspoon of white pepper to the mixture.
Incorporate fresh feta into the bowl.
Squeeze in the juice of one lemon and mix the ingredients together.
Break up the eggs before adding milk to avoid clumping, then add milk and stir until the flour is combined and there are no lumps.
Set the mixture aside to rest for 10 minutes.
Prepare poached eggs by bringing water to a simmer and adding a dash of white vinegar, stirring the water.
Crack the eggs into the swirling water and let them poach for 3 minutes on medium heat without boiling rapidly.
Heat oil in a pan and drop spoonfuls of the fritter mixture into the oil, ensuring not to overcrowd the pan.
Cook the fritters for about 4 to 5 minutes at 170 degrees Celsius until golden brown.
Assemble the dish by placing the fritters on a plate, topping with smoked salmon, and adding poached eggs on top.
Crumble more feta over the top and drizzle with olive oil.
Serve with an extra lemon wedge on the side.
