1 teaspoon of salt
4 pieces of small bay leaves
half teaspoon of freshly ground black pepper
2 tablespoons of brown sugar
300 grams of pork belly cut into small dice
half cup white vinegar
250 grams black pudding
1 stalk of lemongrass cut into three inches long
4 pieces green chilies

Crumble the black pudding in a big bowl.

Add half of the vinegar to the crumbled black pudding and mix well.

Add 200 milliliters of warm water to the mixture and mix until combined, squeezing to avoid lumps.

Set aside the black pudding mixture.

In a medium heat pot, add 2 tablespoons of virgin olive oil.

Add the diced onion and sauté until translucent.

Once translucent, add the minced garlic and keep stirring.

Follow with the minced ginger and sauté together for about two minutes.

Add the diced pork belly and keep stirring to render the pork.

Add freshly ground black pepper and bay leaves.

Add salt and adjust to taste.

Pour in 450 milliliters of water and bring to a boil over medium heat.

Add the brown sugar and the remaining half of the vinegar, then do not stir.

Let it boil before stirring the pot.

Cook the pork for 30 minutes until softened.

Once softened, add the black pudding mixture and give it a quick stir.

Let it boil, then simmer for 15 minutes, stirring occasionally to prevent sticking.

Add the green chilies and cook for another 2 minutes.

Remove the bay leaves and lemongrass before serving.
